This raw chocolate is as raw as it gets! Both main ingredients: cacao and honey are used in their most natural unheated state. Most of the chocolate on the market is made from roasted cocoa solids which undergo a process called Dutch roasting (heating at high temperature). Traditionally, chocolatiers believe it improves the taste. Our chocolate is the proof that the best taste comes when you tamper with nature as little as possible. We use raw unroasted Criollo Peruvian cacao and together with honey, it’s a match made in heaven.
Our honey is also genuinely raw, never heated or processed. It comes from bees foraging in the countryside and gardens of Berkshire and Surrey. For our suppliers, beekeeping is a labour of love rather than a profit gain, so the bees are looked after in the most ethical and sustainable way.
We mix our ingredients at a very low temperature so as not to destroy the antioxidants, enzymes, vitamins and friendly bacteria. Even the dried mangoes on our bars (free from sugar, oils or sulphites) have been naturally sundried to preserve the goodness!
